Это основа вкуса. Идеальным вариантом считаются горная ключевая и родниковая. Но в городских условиях она, конечно, недоступна. По крайней мере, вода для чая не должна быть жесткой и хлорированной. Если в вашем регионе водопроводная вода, так скажем, не очень, титестеры рекомендуют ее фильтровать, отстаивать в течение нескольких часов или использовать бутилированную. 


Точка кипения 

Любители чая знают, что разные его виды нужно заваривать водой определенной температуры и настаивать определенное количество времени. Чем более ферментированный чай, тем выше должна быть температура. Черный заваривают 3-5 минут водой 98-99 °C; улуны – 2-3 минуты при 80-85°C; зелёный чай – 1-2 минуты при 75-80°C; жёлтый и белый тоже по 1-2 минуты, но при 70°C. Травяной чай ближе всех к черному – он настаивается при 98-99°C 3-6 минут.

Традиционно для заваривания используют фарфоровые чайники. Китайцы, которые в свое время чай и открыли, большое внимание уделяют даже сорту глины – она должна быть особенной, «дышащей» и проникнутой силой того места, откуда происходит. Стеклянный сосуд для этой цели тоже подойдет. А вот от металлического стоит отказаться. Пить чай тоже предпочтительнее из фарфоровых (фаянсовых) чашек или стеклянных стаканчиков.

Пить чай с молоком было принято на Тибете и среди племен кочевников. Популярной эта традиция стала благодаря англичанам – законодателям чайной моды. По одной из версий, таким образом они старались защитить хрупкий китайский фарфор от трещин из-за кипятка и окрашивания заваркой, по другой, просто экономили – чай стоил дорого, а молоко – копейки. Сейчас молоко добавляют в чай, чтобы придать ему сливочный вкус, а вот полезность такого напитка вызывает горячие споры.  


Полный вкус 

Лимон, мята, корица — самые распространенные спутники чайного листа. Но некоторые другие продукты и особенно специи тоже позволяют чаю раскрыть свой вкус и добавляют к нему новые нотки. В Индии готовят черный чай-масала — с молоком, сахаром, гвоздикой, кардамоном, корицей, имбирем и перцем. Иногда кладут шафран, анис, мускатный орех и кориандр. Зеленый и белый чай отлично сочетаются с жасмином. В Гонконге пьют черный чай со сгущенным молоком и льдом, на Тибете — зеленый с маслом и солью, в Турции и Греции добавляют анис, в Китае бутоны роз и хризантем, в Великобритании можжевеловые ягоды. На севере Африки в зеленый чай со льдом доливают сок апельсина, лимона или грейпфрута. «Парижский» чай состоит из черного чая, апельсинового сока, лимонной цедры, мускатного ореха, сахара и коньяка, а в финский рождественский зеленый чай добавляют корицу, гвоздику и клубнику. В России часто заваривают чай с шиповником, сушеными лесными и садовыми ягодами — смородиной, малиной, вишней, черникой — и их листьями.

Считается, что успокаивающий эффект от чая наступает через 2 минуты после заваривания, возбуждающий – через 5, ну а просто вкусный напиток получается через 6 минут (когда улетучиваются эфирные масла).
